The 2021 Unity Cabernet Sauvignon by Fisher Vineyards is a harmonious blend of Napa and Sonoma fruit, reflecting the estate's commitment to quality and sustainability. This vintage showcases the depth and complexity that the Unity series is known for.

Tasting Notes:
The wine presents high-tone aromas of red cherry, plum, and rhubarb. On the palate, it offers a plush mid-palate with flavors of cassis and plum, transitioning to notes of cocoa, espresso bean, caramel, and vanilla. The finish is lively and persistent, displaying notable weight and varietal character.

Composition:
This blend comprises 75% Cabernet Sauvignon, 9% Merlot, 6% Petit Verdot, 4% Cabernet Franc, 3% Malbec, and 3% Syrah, sourced from both Napa County (75%) and Sonoma County (25%).

Winemaking:
The grapes were harvested between September 7 and October 18, 2021. After double sorting, fermentation occurred in open-top and static stainless steel tanks. Malolactic fermentation was completed in barrel, and the wine aged for 22 months in 100% French oak barrels, with 25% being new oak.

Aging Potential:
With an alcohol content of 14.7%, this wine is expected to age gracefully, developing further complexity over the next 10–15 years.
