Following natural fermentation in cement vats, the wine spends a year aging in large 50-hectoliter foudres before moving to seasoned 225-liter barrels for another year, with no fining or filtering before bottling. Le Puy’s wines are a harmonious blend of acidity, fruit, tannin, and earthy minerality, offering a captivating balance. The "Emilien" unfolds with lush red fruit, while the palate is vibrant and deep, pulsing with energy. A subtle, savory umami note complements the wine’s brighter tones, creating an intriguing, grounded finish.
The estate is perched on a plateau shared with Saint-Émilion and Pomerol, rising to about 110 meters above sea level, one of the highest points in the Gironde. The soils are mainly a blend of clay, flint, and limestone, known for their high acidity. With an average vine age of 50 years, the estate has never used synthetic treatments and is certified biodynamic. Harvesting is done by hand, followed by full destemming and a lengthy fermentation of two to four weeks with only native yeasts—no chaptalization or SO2 during fermentation. Aging, or "élevage," follows lunar cycles, and the two key red wines, "Emilien" and "Barthelemy," age in barrels for 24 months. The wines are bottled without fining or filtering. Jean-Pierre Amoreau and his son, Pascal, lead the vineyard management and winemaking.
