Blend: 70% Merlot, 20% Cabernet Franc, 10% Cabernet Sauvignon

Château Hyot features delightful aromas of ripe blackberries, plum, warm spices, and a hint of smokiness, complemented by subtle earthy notes. The wine is well-balanced, showcasing a beautiful interplay of fruit and acidity. Flavors of figs, spices, and fresh summer blossoms linger through the finish. The grapes come from 40-year-old vines planted in gravel and clay-limestone soils, all harvested by hand. Seventh-generation winemaker Amélie Aubert aims to create terroir-driven wines that exhibit a refined structure while maintaining balance and freshness.  Amélie respects the vine, believing that “quality is not possible with quantity,” and she strives for her wine to embody the essence of this remarkable terroir influenced by a temperate oceanic climate.
