Sapaio is hand-harvested and undergoes alcoholic fermentation in stainless steel tanks with extended maceration on the skins. The wine is then transferred to French oak barrels for 18 months where it then undergoes malolactic fermentation. Full-bodied with firm with a rich, fleshy texture, this wine presents a complex structure with well-integrated tannins, offering aromas of dark fruit, spices, and subtle oak influence.
Sapaio covers 40 hectares of land, with 27 dedicated to vineyards. Of these, 18 hectares are located in Bolgheri, while the remaining 9 hectares are in Bibbona, an area known for its higher altitude and cooler, breezier microclimate. The vineyards are planted with Cabernet Franc, Cabernet Sauvignon, Merlot, and Petit Verdot. The soil is a blend of sand and clay, enriched with marine limestone and rounded pebbles from ancient rivers. This diverse mix of 27 soil types contributes significantly to the complexity and character of the wines.
